don't most people like pot stickers? well i think so....... this dish is super simple and fun to make with a delicious filling that you could eat alone ..... not that i have done that :)
makes 24 pot stickers
dough
2 1/4 cup flour
1/2 cup boiling water
1 tsp salt
1/2 cup cold water
filling
1 tsp salt
2 tbls soy sauce
2 tbls rice vinegar
3 scallions (minced)
2 tsp ginger (minced)
1 tsp black pepper
2 tsp sugar
2 cups spring mix pre packaged salad (cut into small chunks)
1 large carrot peeled and graded
1. in a bowl combine flour, and salt.
2. add in the boiling water and mix with your hands until very combined and grainy
3. add in cold water and form into a ball
4. let sit in a greased bowl for about 30 minutes.
filling
1. in a large bowl add all of the ingredients for the filling.... you're done! i know so simple!!!
prepare the pot stickers
1. cut the dough into 24 even pieces
2. spread out wide until thin and about 3 inches wide
3. add in about 1 teaspoon and a half of filling (make sure very little juice is in it)
4. fold the top half of the dough over onto the other side and pinch each little corning of it so it is closed all the way!
5. repeat until all of the dough is gone (you should have extra filling, but thats ok cause you can eat that plain as an Asian spring mix salad
6. heat up a pan at high heat and fill with about 2 1/2 cups vegetable oil
7. place in the pot stickers on one side
8. after 2 minutes (or golden brown) flip over and cook until golden
9. repeat until all gone! yay you did it :)
