crack cookies

based on many recipes and the famous crack pie from the milk bar.... these cookies are so addictive.. hence the name. a really tasty oatmeal cookie, and then a gooey buttery, sugary, caramelly center.... ahhhhhhhh! i love these cookies so much! they are probably on my top 3 list in the whole wide universe.. and no i am not exaggerating.


makes 24 cookies

for the cookie

6 tbls butter

1/2 cup granulated sugar

2 eggs

3/4 cup brown sugar

3/4 cup flour

2 1/2 cup oats

1 1/2 teaspoons baking soda

pinch of salt



for the filling

1/2 cup brown sugar

3/4 cup granulated sugar

2 tbls cornstarch

3 tbls butter (melted)

1/3 cup heavy cream

3 egg yolks

a splash of vanilla



for the filling.

1. preheat oven to 350oF and grease an 8 x 8 baking pan.

2. In a large bowl combine melted butter, and sugars

3. add in the egg yolks and vanilla. mix until combined

4. pour in the heavy cream and cornstarch. mix until very smooth and creamy... it should be a bit liquidy.....

5. put in oven and cook for about 30 minutes or until golden brown

6. take out of the oven and cool in the freezer for 2 hours


for the cookie

1. preheat the oven to 375oF. in a stand up mixer with the paddle attachment cream the butter and sugars until very creamed.

2. add in the eggs, baking soda and salt.

3. put in the flour, and oats. it will get a bit thick so take a rubber spatula and make sure the oats and flour get combined

4. place the dough on a pan ( 1 1/2 tbls) 4 by 3s. take the butter caramel filling and place 1 tbls on top of the cookie batter. ( make sure the cookie batter is a little bit pushed down so it is like a table for the butter.

5. cook for about 10 to 12 minutes. the cookies should be brown, and the insides a little pale form the butter.

6. sprinkle a dusting of powdered sugar on top and indulge into the best cookie ever!!
