pastei de nata

this super simple treat is super super good! normally sold on the streets of portugal(which I will be going to in a couple weeks!! I am so excited!!) anyway there is a flaky crust, custard in the middle and then baked to make top caramely!!

makes about 12

1 slab of puff pastry

1 egg

1 egg yolk

1 1/2 cup milk

1 cup sugar

1. In a pot whisk together the egg and yolk, sugar, and milk.

2. Cook on medium heat and whisk non stop until it is thock and creamy. About 10 minutes!!

the way to see this is dip a spoon into it and swipe your finger through it... if the custard doesn’t come into each other and holds its shape it’s done! If it isn’t keep cooking it longer.

3 preheat the oven to 375 and spray a mini cupcake pan

4. Roll out puff pastry with a rolling pin until very thin! Fold it in half( top to bottom) then roll it from bottom to top

5. cut into 12 different pieces all even in size

6. Take the dough ball and smush it into a flat pancake making sure when you rolled it the rolled part is showing

7. Put in the pan to make like a pie crust in the tin, then place a 1/2 tablespoon full of custard in it.

8. Bake for 22 minutes or until golden brown

enjoy with a dusting of powdered sugar!! Yay!!
