so much blueberry muffins

ever wanted a really good muffin and it just made you want to eat the whole entire thing plus more? yes... that is exactly what i think about when eating this muffin. when you open the moist cake it is like a big blueberry lava explosion of sweetness..... .so good!!! my mouth is watering just writing this....


makes 12


2 cups of blueberries

2 eggs

3 tablespoons of veg. oil

2 cups flour

1/2 teaspoon salt

1 teaspoon baking soda

1 teaspoon baking powder

2/3 cup sugar

turbinado sugar (for topping)


preheat oven to 350 degrees

1. In a large bowl whisk together the vegetable oil, eggs, milk, and sugar.

2. In a separate bowl combine the flour, baking soda, baking powder, and salt.

3. Combine the flour mixture and sugar mixture until just combined. But do not over mix or your treats will be pretty chewy and have a WIERD texture to them which sucks;)

4. add in your blueberries and carefully fold them into the mixture so your muffins won't be purple, well way more than they should be.....

5. place 2 1/2 tablespoons of batter into a lined cupcake tin.

6. sprinkle the turbinado sugar on top of each cake (about 1/2 teaspoon each cake) it adds the extra sweetness and different texture that i love!!!

7. bake for about 15 to 20 minutes or until golden brown on top and the tooth pick in the center comes out clean!!


enjoy with a nice smear of butter (i like kerrygold) but you know butter is normally butter.... funny
