apple hand pies!

you know you really really really want a nice big slice of pie, but you really really really do NOT want to make a whole pie..... that is why you make little hand pies to really help your craving....

makes 8 pies

dough...

1 1/4 cup flour

1 tsp salt

1 tbls sugar

1/2 cup cold water (very cold)

4 tbls butter

fillin....

2 red delicious apples (diced into small 1/2 cm by 1/2 cm cubes)

3 tbls sugar

1 tsp cinnamon

2 tbls lemon juice (fresh squeezed is preferred but not needed)

egg wash.....

1 egg and 1 tbls water (whisked together)

1. to make the dough, in a bowl combine flour salt and sugar.

2. cut butter into small cubes and mix the butter into the flour mixture. work the butter in with your hands until it is flaky and crumby.

3. add in the water a little bit at a time until the dough is together.

4. work the dough into a ball and refrigerate for 15 minutes.

5. to make filling combine all of the filling ingredients and let sit for 15 minutes.

6. preheat oven to 375oF

7. cut the dough into 8 2 by 5 inch rectangles

8. add in the filling... about 2 tsp of it into the middle. tip: do not put any juice in the middle, or the juice will seep over the sides and you will not be able to close it...

9. fold the top over and press the sides together

10. spread on a little bit of egg wash over the tops and bake for about 25 minutes or until golden brown
